People said baby travelling over 2 months is better because their ears have develped better for taking care of the ear pressure casued by the plane daparture & landing.

As for the documents for the baby travelling, you need the birth certificate for applying for the passport. But before you can have it, you can go to the city office to get a letter indicating the birth certificate is under processing. Just tell them the situation & they will draft the letter for you. With this letter plus an air ticket, you can apply for an expedite case to have the passport in about 10 days(not very sure now). And yes, your baby does need a visa for entering China as he/she is not a Chinese.
